Chocolate-Mint Cupcake Dessert to Try on St. Patrick’s Day

  • Gold pearl dust
  • Chopped mint Andes candies – 2 packages (4.67 ounce each)
  • Heavy whipping cream – ½ cup

Get started with these directions for preparing:

  • Bake and prepare cake batter as per directions on the package and then cool it completely.

  • In the meantime, draw a shamrock design on paper with the help of a pencil. In a micro wave-safe bowl, melt the candy coating and stir until it becomes smooth. Transfer it into a re-sealable plastic bag and cut a small hole near one corner. Place waxed paper over the shamrock pattern and pipe the design. Make 23 shamrock patterns and refrigerate them until they are set.

  • Brush wafers with corn syrup and pearl dust. Lift candy shamrocks from waxed paper and brush the bottoms with corn syrup and attach them on the wafers. Set aside.

  • Heat cream in a saucepan for about the boiling point and pour them over Andes candies. Whisk them until they become smooth. Cool them slightly and stir it occasionally. Dip the cupcakes into melted mints. After they set, press shamrock-topped wafer on top of each cake.
